Davino Rose belongs to the top range of Davino and is produced only in favorable years from grapes sourced from some of the finest Merlot and Cabernet Sauvignon parcels in the Dealu Mare vineyard. The timing of the harvest and the rigorous selection of the grapes are focused on capturing the generous fruit character of full ripeness while preserving freshness and aromatic precision.
After destemming and gentle crushing, the rose must is obtained using the saignee method through gravitational separation. Skin contact takes place at 14-15°C for approximately 3 hours for Merlot and 5 hours for Cabernet Sauvignon. The must is then decanted and cold-stabilized for 48 hours at approximately 10°C.
Fermentation takes place at a controlled temperature of 16-18°C in 100 hl stainless steel tanks for 14 to 17 days. The wine is subsequently matured for 5 months on fine lees in stainless steel, adding texture, structure and aromatic complexity while preserving its fresh and vibrant character.
Fruity and expressive, with aromas of red forest fruits highlighted by strawberry and blackcurrant, creating a fresh and persistent aromatic profile.
Fresh and balanced, with a well-structured, generous and rounded palate. The wine combines freshness with breadth and finishes with a harmonious, persistent character.
